What is Blond Chocolate?

Blond chocolate was developed in the mid-2000s after eight years of research. To create it, white chocolate chips made from cocoa beans, sugar, and milk solids are roasted at a temperature of around 95 degrees Celsius while being constantly stirred. This process gives them a beautiful milky coffee color and a unique flavor. Once cooled, the blond chocolate hardens while retaining its lovely hue and can be worked with in the same way as its dark, milk, and white chocolate counterparts.
